Softies and Saisons

The Joy of Cheese, a five year old tasting series focused on new hand-crafted cheeses, presents, softies and saisons at d.b.a Bklyn. Martin Johnson, a veteran cheesemonger (and currently a weekend warrior at The Bedford Cheese Shop) will present seven unique soft cheeses and Ray Deter, owner of d.b.a., will present seven saisons that he has chosen to match the cheeses. We will take turns discussing our choices. The cheeses will include the very best Camembert available in America, the very best Roquefort in the world, an extraordinary goat’s milk cheese from a leading affineur, and four other amazing creations that are not easily found even at top NYC cheese retailers. The beverage list will almost certainly include Saison Dupont and six others of similar caliber.
