Beer Description
Monk de Soleil is our first collaboration beer with our friends at 7venth Sun Brewery. This amber colored ale was initially fermented with a classic Belgian yeast strain, then spent several weeks undergoing a secondary fermentation with a culture of Brettanomyces Bruxellensis. Finally we dry hopped it. The result is a dry moderately hoppy ale with definite Belgian character and complex flavor profile. Enjoy!
