2nd Act Deep Cuts

Inspired by Belgian Saisons near the French border, Deep Cuts Saison pays homage to the independent and unique nature of these beers and the breweries that craft them. In the making of this traditional “style” we started with the most important component, a Belgian yeast strain to drive the overall personality of the beer. We selected a Saison strain that leaned slightly towards fruit, showcasing notes of grapefruit flesh, orange peel, and papaya. We fermented this beer at high temperatures to coax subtle white pepper and clove spice character out of this complex strain. The judicious addition of noble hops and the German aromatic variety, Hallertau Blanc, served their supporting role by complimenting the fruity and spicy nature of the yeast and adding a touch of herbal woodiness. Malt selection was made to give the yeast cells some tasty sugars to munch on and do their thing (pilsner), but also to create a creamy texture (pale wheat) and create a sensation of freshly baked bread (Munich I). The higher than average attenuation results in a dry, crisp finish accented by small amount of noble bitterness. Just like the “B-side” tracks you’ll find yourself listening to on French radio while touring the countryside, we look to join the ranks of the lesser known beers in this popular category that are equally delicious in nature as their mainstream counterparts.
