Beer Description

Our take on a traditional Berliner Weisse starts with a base beer of 40% wheat malt and 60% pilsner malt. It is then kettle soured for a period of 36-48 hours with the lactobacillus plantarum bacteria. Once the desired pH level is reached, the soured wort is then boiled to kill the living bacteria and the brewing process resumes normally. We then finished the fermentation of the beer with a German lager yeast strain. The sour flavors stand out over the clean fermenting lager yeast giving the beer a crisp refreshing finish.
