DTSJ Co Sueños

Dreams; sueños in Spanish. This beer was created with a blend of barley and wheat, in the traditional farmhouse style. It is a raw ale, meaning that it is not boiled like most beers. This preserves much of the original flavor of the malts. It is fermented with one of our landrace mixed cultures and hopped with mandrina bavaria hops just enough to prevent the beer from becoming too tart. We allowed it to ferment a second time over fresh peaches which adds flavor, aroma and color. The result is citrus and stone fruit on the nose and grapefruit, unripe peach, green grapes and light sourdough bread dough on the palate. Enjoy the fruits of our dreams.
