Black Project JATO

JATO began life as PARADISE, a golden orange, assertively tart sour beer made using only coolship-caught microbes in one of our Black Project soleras. We took this beer, already delicious and complex on its own, and dry hopped it with a blend of Triskel, Mosaic, and Strisselspalt hops. The combination is a well-meshed blend of the citrus, tropical, and juicy characteristics of the Mosaic with the fruity, floral, and spicy aromas of the two continental varietals. The hop blend produces such an incredible bouquet of aromatics, that every time you smell this beer, you may find something different and interesting. The aroma carries over into the flavor, melding tropical fruit with the distinctive malt character and mature acidity. Hop character may change, develop, or fade over time yielding interesting results.
