Beer Description
The journey of two different base Saison batches fermented separately first in stainless steel, then one secondarily in a Chardonnay barrel from Wattle Creek Vineyard with native mixed culture, & one in a Cabernet barrel from Pelligrini Wine Co. with Funk Weapon #2 Brettanomyces blend from Bootleg Biology. Blended together after a year-long barrel rest and bottle conditioned with fresh Brett Anomala for 8 months. The creation is dry with an approachable acidity, a hint of tropical pineapple, & a restrained funk begging you to crush the whole bottle. Deeply humane and altruistic, as well as acutely sensitive and extraordinarily intuitive. Some people leave an everlasting mark on your soul.
