Beer Description
Ice-nine is a spontaneously fermented golden ale aged for upwards of one year in a single wine barrel periodically topped up with naturally cryoextracted Vidal Blanc juice until refermented to dryness. For bottle refermentation, bottles were dosed exclusively with the selfsame juice.
