Beer Description
We tried a few small batch cask variations of our beloved Des Moines IPA and thought they were too good not to share! Keeping the same malt bill and similar kettle hops, we made our big changes in the fermenter by using a different yeast strain and, in a major shift for this beer, we dry-hopped before fermentation was complete. The madness continued with a healthy post primary fermentation dosing of bright and tart grapefruit puree to accentuate the hop character. Did we stop there? Of course not! We added a healthy second dry-hopping to the mix after secondary fermentation.
