This beer ‘style’ leaves much up for interpretation, exercising the recipe-building part of the brain to choose what you want to showcase on its blank canvas. An incredibly simple grain bill like some of our classic pale ales, but an aggressive hop load like our bigger IPAs. A simpler mash chemistry, not chasing after an intense haze, but not fining to a clear beer. A huge focus on grabbing your attention with its flavor and drinkability. We’ve been seeing phenomenal examples come out of Australia recently, so wanted to put that twist into ours. Cryo Riwaka and Eggers Nelson in both the whirlpool and dry hop, and boosted with Phantasm directly in the tank, this beer gives intense pineapple and papaya with some fresh honeydew melon notes. Expressive sauvignon blanc grape must notes in both the aroma and flavor, really showcasing some of those southern hemisphere characteristics. Refreshing tropical cocktail through and through with a faint dank bitterness balancing it out.
