When humans first began brewing beer, the science behind fermentation was not well understood and probably seemed a bit like magic. It’s likely that in those early dates, microbes from the air and their wooden vessels would inoculate the wort, meaning one at a time, all beer was sour beer! In conjuring up a plan for this ale, we honored that natural sort of magic by culturing lactobacillus to quickly sour the whole batch. The resulting brew retains the magic of those bygone days, with a citrus-like tartness that awakens and refreshes your palate with each sip. Of course, any wizard worth the name has more than one trick up their sleeve
