Blackduck wild ferments their ciders from wild or estate grown fruit. This one is made from 25% brine, 50% cherry bitter, 25% banana baby. Those are all apples supposedly ;p
Our ¡No Pasarán! Sidra cider is made in a Northern Spanish style, which is our personal favorite region for cider (Asturias and Basque Country). It’s made with 90% sharp heirloom and 10% bittersweet and bittersharp apples.
The cider began fermentation as pomace before being pressed off after ten days. Lots were blended together to create this still cider that pays homage to Spain.
