This is an unoaked, unaged pommeau. Eau de Vie blended and matured with fresh cider.
What is racked off the top is a golden, clear, sweet and spirited aperitif or dessert drink. Traditional French Pommeau (as I’m sure you know) is more aged
and oaken. Our offering represents what goes into those barrels while it is still fruity and fresh.
