Beer Description
Good things happen when you wait. In this case, we gave a well used O’Begely’s whiskey barrel full of single hop Topaz Pale Ale wort a healthy pitch of brettanomyces claussenii and 10 months. This beer did not encounter any stainless steel until we kegged it. Fair warning, we only have a quarter barrel of this so get here early if you’d like to try our first foray into 100% oak fermentation.
