Beer Description

Biere De Noel (for Charles Bukowski) 11.5% ABV. Our first annual Christmas beer started it’s life as a very strong Belgian dark ale fermented with our house saison yeast blend. We then aged it on sour cherries…just enough to add some fruit character and a bit of acidity. Then it headed to red wine barrels with our house Brett blend to bring some funk.

The aroma is similar to an old Bordeaux…oak, funk, dark cherries The flavor is dark fruit, complex malt and burnt sugar notes. Unbelievable drinkable for a beer of this strength. While this is wonderful now, this is a perfect beer for long term aging. Consider stashing a bottle for next year as a special gift.
