Beer Description
This Farmhouse-inspired wild ale was brewed with malted wheat and NY grown triticale (wheat/rye hybrid). The beer rested overnight in our coolship to inoculate with local microflora. Fresh Opal Basil was added, which imparted a mildly sweet, candy like flavor of lemon-lime. Our house yeast was pitched to add another layer of complexity to its acidic profile. A fresh salinity rounds out the beer’s finish.
