Volume IX features freshly picked apricots with a strain of Brettanomyces Bruxellensis that is known for the white wine and SweeTarts aromas it creates. This combination yields aromas of fleshy apricots, Fruit Loops, honeysuckle, wet hay, and lime Sprees.
