Cantina Cantina Classy Sassy

Lager Aged in Oak – 3.2% alc/vol – Sassy Special was also a summer of 22’ release. Our first collaboration with homies at Return Brewing. The base beer being Table Lagerbier that we hopped heavily with Citra and Tettnang. We decided to rest the beer in large format oak (500L puncheon) for one year. While in oak the beer spontaneously was inoculated with the local microflora from the farm within our space. What yielded over time is something we have yet to experience. Classy Sassy pours very brightly pale yellow with high carbonation. The aromas present a Citra that has been melded with wood and microbes. Subtle tropical fruit lead, followed by soft herbal notes, and a zippy citric finish. Body is soft yet light, the original upfront bitterness of the can release has been mellowed and replaced with beautiful oak notes that sit on the palate pleasantly. One of our favorite beers we have produced to date.
